Kombu Ice wine cask matured Limited Edition
Aimsir (a 2 Michelin star restaurant in Meath) and Currach Irish whiskey wanted use one of our Rare Apple Ice Wine barrels to age a single malt Irish whiskey which had been aged in a Kombu seaweed charred cask. This was launched (and had since sold out), and we took the barrel back and put our 2019 Ice wine into it. We allowed it mature for nearly 5 years years and bottled it in 2024…..nature intervened and introduced a light fermentation which added a natural sparkle, but without going too far and the result is this rarest of Rare Apple Ice Wines, and less than 400 bottles remain.
Taste Notes
Our Kombu cask Rare Apple Ice Wine Limited Edition has an alluring nose of treacle, charred marshmallow, orange peel, meadowsweet and sea breeze. But what makes it really unique and unlocks the aroma is the subtle natural sparkle from natural bottle conditioning
