Old Cork Apple Mojito

A Cork-born reimagining of the mojito that swaps rum-heavy sweetness for Rare Apple Ice Wine, Bán Poitín and a touch of spiced Irish rum. Fresh mint, lime, soda and bright apple notes make this a lifted, cooling long drink for warm days.

Ingredients:

  • 30ml Killahora Orchards Rare Apple Ice Wine
  • 20ml Bán Poitín
  • 10ml Black’s Spice Irish Rum
  • 6 mint leaves
  • 20ml lime juice
  • 10g sugar
  • Soda water

Method:

  1. Add 10g sugar and 20ml lime juice to a highball glass, then stir until the sugar starts to dissolve.
  2. Add six mint leaves and gently press them with a muddler or spoon to release the aroma.
  3. Pour in 30ml Killahora Orchards Rare Apple Ice Wine, 20ml Bán Poitín and 10ml Black’s Spice Irish Rum.
  4. Fill the glass with crushed ice.
  5. Top up with soda.
  6. Stir gently from the bottom.
  7. Garnish with a mint sprig and a lime wedge.
