Old Cork Apple Mojito
A Cork-born reimagining of the mojito that swaps rum-heavy sweetness for Rare Apple Ice Wine, Bán Poitín and a touch of spiced Irish rum. Fresh mint, lime, soda and bright apple notes make this a lifted, cooling long drink for warm days.
Ingredients:
- 30ml Killahora Orchards Rare Apple Ice Wine
- 20ml Bán Poitín
- 10ml Black’s Spice Irish Rum
- 6 mint leaves
- 20ml lime juice
- 10g sugar
- Soda water
Method:
- Add 10g sugar and 20ml lime juice to a highball glass, then stir until the sugar starts to dissolve.
- Add six mint leaves and gently press them with a muddler or spoon to release the aroma.
- Pour in 30ml Killahora Orchards Rare Apple Ice Wine, 20ml Bán Poitín and 10ml Black’s Spice Irish Rum.
- Fill the glass with crushed ice.
- Top up with soda.
- Stir gently from the bottom.
- Garnish with a mint sprig and a lime wedge.
